HOW I JUSTIFY EATING COCONUT CREAM PIE FOR BREAKFAST


Soooo....yesterday was apparently National Pie Day (which confuses me, because isn't that in March? Oh, well.....who am I to argue TWO pie holidays??), and I had a strong hankering all of a sudden for Coconut Cream Pie.

Because, DUH. Coconut is LIFE. <3

Anyway, knowing me as I do, having a big ol' custardy pie in our house would lead to NO good....so I had to come up with a way to justify it by hunting down a healthier alternative.

So imagine my absolute DELIGHT when I came across this overnight oats recipe?!?!?!

Friend, if you haven't tried overnight oats yet, you are totally missing out!! They are a delicious alternative to your typical hot cereal, and they require NO cooking....just stir the ingredients together and let it all meld together overnight in your fridge!

The result? O...M...G.


I can safely say that I've just "fixed" my Coconut Cream Pie craving, without the "pie" part (and raised it up like 127 "healthy-ish" notches). AND I ATE IT FOR BREAKFAST. 😱

And I don't even feel a teensy bit guilty. :) Plus, I shared it with my challengers in our January HEALTHY YOU challenge group, and they may or may not have blown me about 75 air kisses for this little faux-"cheat" treat. LOL

Here is the simple recipe, everyone....ENJOY!!

COCONUT CREAM PIE CHIA OVERNIGHT OATS:

(Adapted HERE from Marcie at Flavor the Moments)

(NOTE: I halved the recipe and it makes PLENTY for 3-4 servings!) :)

INGREDIENTS:

2 cups old fashioned rolled oats 2 tablespoons chia seeds 2½ cups refrigerated coconut milk (such as Silk or So Delicious), or your favorite milk 4 tablespoons maple syrup or honey (Might not need much, since the coconut is already sweetened!) 1 cup plain Greek yogurt ⅓ cup sweetened shredded coconut Toasted coconut flakes, sliced almonds, or fruit, for topping (optional)

DIRECTIONS:

Place the oats, chia seeds, coconut milk, and maple syrup (if using) in a large bowl and stir to combine. Cover with plastic wrap and chill for a minimum of 3 hours or overnight. Stir in the Greek yogurt and shredded coconut. Serve with toppings of your choice and enjoy!
